Some restaurants begin with a business plan. Bread & Bottle began with a simple question: why can't we find a place that serves the kind of food we want to feed our own family?

“We wanted to go out with our family; we wanted to enjoy American cuisine, but we also care about what we put into our bodies; we eat very thoughtfully at home… why can’t we find that when we go out?” said Jennifer Marion.

Jennifer and her husband Chris decided that the answer wasn't to keep searching, but to build what they were looking for themselves, within a community they already loved. 

Today, Bread & Bottle, located in Downtown Princeton, has become a unique regional dining destination, combining a scratch-made kitchen, house-baked breads, North Carolina craft beverages, and a welcoming atmosphere where families feel right at home.

Jennifer and Chris first met while serving in the military in 2007.

Jennifer grew up in a military family, spending much of her childhood in Germany despite her family's deep North Carolina roots, specifically in the Princeton area. Chris is originally from Ohio, though it was his idea to relocate to Johnston County.

While visiting JoCo, Chris looked out into the woods behind Jennifer's grandmother's property and casually said it would make a great place to build a house. That conversation eventually brought the couple permanently to Princeton, where they settled, raised their family, and became part of the community they now proudly serve.

Like many busy families, Jennifer and Chris often found themselves looking for somewhere to grab dinner after long days. But they couldn't find a restaurant nearby that matched the way they wanted to eat.

"We finally decided to stop complaining," Chris said. "We just looked at each other and decided, let's just create what we’re looking for."

That decision became Bread & Bottle. A beautiful building in the heart of Downtown Princeton with a welcoming and warm interior, a large patio, and an open grassy play area for kids to run around (fenced in for safety). 

Everything about the restaurant reflects their own lifestyle, from the menu to the ingredients to the atmosphere. As Chris mentioned while reflecting on how the restaurant concept came together: if you can see it, that was Chris’s input; if you can taste it, that’s Jennifer. 

“She’s the bread,” he said, “I’m the bottle.” 

Walk into Bread & Bottle, and you'll quickly notice one thing: very little comes from a package. The restaurant makes nearly everything in-house, including fresh bread for their famous paninis, muffins, cookies, seasonal baked goods, dressings, sauces, and more!

"We wanted somewhere our family would feel comfortable eating. Somewhere kids are welcome, families are welcome, and we could be proud of everything coming out of the kitchen," Jennifer elaborated.

Bread & Bottle has become known for something unusual in the restaurant world: they're completely seed oil free. Instead of highly processed oils, the kitchen cooks with olive oil, butter, and beef tallow. Their breads are made using organic, unbleached, and unenriched flour similar to what's commonly used throughout Europe. All their beef is grass-fed. The result is food many guests say they tolerate much better than traditional restaurant meals.

The menu features familiar comfort foods, but with Bread & Bottle's own twist. Guests will find burgers on house-made buns, scratch-made paninis, hand-cut fries cooked in beef tallow, fresh salads, house-made soups, seasonal specials, and freshly baked desserts. Every recipe starts with the same philosophy: quality ingredients first.

Even their burger took weeks of testing before they were added to the menu because, as Jennifer noted, “we wanted to get the buns just right. We couldn't buy a bun that met our standards. We realized, if we were going to serve burgers, we had to make the buns ourselves."

He and Jennifer take sourcing and serving very seriously. To be clear, they are not necessarily catering to people with allergies or intolerances. Rather, they want their customers to feel like they can enjoy the experience of eating out without the mental work of wondering where their food came from and how it will make them feel later. 

Jennifer and Chris say their goal is to simply serve food they would proudly feed their own family. Jennifer mentioned the only place in Bread & Bottle that you’ll find dyes or natural flavors is their whimsical and extensive craft soda offering; over 150 options that often delight the younger patrons.

Bread & Bottle was designed to be more than somewhere to grab lunch or dinner, though it certainly is that. And while you’re at it, be sure to grab something for the road. Fresh breads are available daily, with advance orders recommended for specialty loaves and baked goods.

Beyond that, it's become a gathering place for Princeton and the community. The restaurant also proudly honors the town's history. Inside, you'll find pieces of Princeton woven throughout the building, including memorabilia from the former Princeton High School, artifacts from the historic Gurley Mill that once occupied the property, and even the top section of Princeton's former water tower displayed as part of the décor

The "Bottle" in Bread & Bottle isn't just part of the name. The restaurant features a carefully curated selection of North Carolina craft beers, rotating taps from breweries across the state, and specialty events celebrating local brewers.

Throughout the year, visitors can enjoy live music, trivia nights, music bingo, wine tastings, and other seasonal special events. One of their signature annual events, Pigs & Pints, pairs championship barbecue with North Carolina craft beer, live music, and community fellowship. An Oktoberfest celebration each fall brings traditional German food, specialty beers, and a festive beer garden atmosphere to downtown Princeton.

“This Summer we’re doing a Kids Eat Free Thursdays program,” said Chris. “We are truly a family-oriented restaurant. We wanted kids to feel welcome here. Families belong together."

The concept that Jennifer and Chris have painstakingly worked to build and nurture is working. Now, less than two years after opening, Bread & Bottle is preparing to expand. A second location is set to open in Downtown Wilson, overlooking the Vollis Simpson Whirligig Park and neighboring Casita Brewing Company.

While the footprint is growing, Jennifer and Chris say the mission remains unchanged. Every location will offer the same commitment to quality ingredients, community, and hospitality that first made Bread & Bottle a favorite in Princeton.

“We are truly filling a need in the community and in the marketplace for what we offer, and we’re excited to see where that takes us,” said Jennifer. “I think the key is that we believe in what we’re doing and we’ve surrounded ourselves with a great team that also cares about the quality of the food and the level of service we provide.” 

Whether it's a loaf of fresh-baked bread, a restaurant, or a community of people, making things from scratch takes time and intentionality and love. It takes effort and thought, from the ingredients to the process; something that Chris and Jennifer know intimately now after two years of hard work and more ahead. But worth it, to both of them and to the patrons that have found something special at Bread & Bottle. 

"We have guests who tell us this is one of the only places they can comfortably eat,” says Chris. 

Whether you're stopping in for a handcrafted burger, picking up a fresh loaf of bread, or spending an evening enjoying live music and craft beer, Bread & Bottle offers an experience that's as much about community as it is about great food.
